4 tart large apples (can mix ’em up variates: Granny Smith, Fuji, Pink Lady)
1/4 c. chopped pecans
1/4 c. chopped raisins (or a little more if you wish)
3-4 tbs. agave
2-3 tbs. pure maple syrup
4-5 tsp. organic earth balance buttery spread (or any other butter you wish)
1-2 tsp. organic cinnamon
1/4 tsp. organic nutmeg
1/2 c. water
1/3 c. bourbon
pre-heat oven to 375 degrees.
wash the apples.
remove the cores about 3/4″ wide and replace the bottom of core to cover bottom of apples
mix in a bowl:
pecans
raisins
agave
maple syrup
earth balance buttery spread
cinnamon
nutmeg
place the apples in a glass pyrex or pyrex-like baking dish
stuff each apple with the raisin mixture
add the bourbon and water into the baking dish
bake for approx. 35 minutes or until tender but NOt smushy (check w/toothpick)
baste the apples with the liquid/juices a few times
can serve and eat just as they come out of the oven
or
sprinkle a small amount of cinnamon on top
and/or
serve with non-dairy vanilla ice cream
as yummy as pie, no lie
