saute in olive oil:
onions, chopped small
garlic, fresh chopped small
sea salt
pepper
garlic powder
add:
canned black beans (liquid included)
veggie broth (enough so beans are not dry)
mexican hot sauce
a few shakes red pepper flakes
a few shakes mexican seasoning
saute on medium/high heat until beans “burst”
then:
cover and simmer on low heat for approximately 1/2 hr – 45 minutes
can cool and put in refrigerator until ready to serve
heat again when ready to eat
amazing all alone
or
w/grilled veges (shrimp?), cheese, lettuce, tomato, tortilla
or
use your imagination
yummy!

1/4 c. white or yellow miso paste
2 tbs. organic apple cider vinegar
3 tbs. organic whole grain mustard
3 tbs. water
sea salt to taste
organic pepper to taste
either whisk or blend all ingredients in blender.
use as a quick and nutritional salad dressing.

As dieters, we are either STARVING or STUFFED.
Never just HUNGRY or FULL.
One of the coolest things to feel is the real sense of physical hunger.
When you learn to wait for this true physical hunger you will be amazed at how your food will taste.
There really IS something to that old saying “don’t spoil your appetite”.
When you eat before your body is truly physically hungry, I guarantee that your food will not have very much flavor.
Once you have experienced the true bursting flavor of each bite by eating when you are physically hungry you will be able to recognize when you are full (not stuffed).
When you are eating slowly and concentrate on your meal, you will have the “power” to stop when you are full (comfortably full…not stuffed). You will only want to eat what tastes great to you. You will discover eating past your “full point” is just a waste of time (and calories) because the food will no longer taste as good as when it when you ate it when truly hungry.
Practice eating slowly.
Wait until you are truly physically hungry to eat.
Choose food that you really LOVE.
Be conscious of your satisfaction level
and
feel your fullness.

3 c. strawberries (rinsed, hulled and halved or quartered)
1-2 tbs. organic agave (or any sweetener you choose, to taste)
2 tbs. marsala wine
combine all ingredients in a bowl.
let mixture sit for approx. 1 hour.
yummy over vanilla icc cream/ rice or soy ice cream.
also yummy on pancakes/crepes.
or
super yummy all on their own!

“Oh, I always gain weight on my vacation” becomes a self-fulling prophecy.
You need to let go of that negative self-talk.
I don’t want you to “work so hard” at attempting “perfection”.
If your vacation destination doesn’t include some physical, make it a point to engage in something that requires you to move. Not only will you feel better (breathing IN and breathing OUT), you will tend to make food choices based on what you actually want at any given time.
This way, a lot of the “guilt” that comes along with “vacation weight gain can be put to rest.
Cut that negative self-talk.
“Switch the channel” in your brain from destructive thoughts to “I choose to eat or not eat something because I will only eat what I love and what makes my body, mind and spirit feel good!
“oh, I always gain weight on my vacation” … erase the thought!

quinoa (red and regular) – cooked
chopped fresh organic tomatoes
chopped organic scallions
(optional) – chopped organic cucumber
(optional) – chopped organic celery
(optional) – chopped organic carrots
(optional) – chopped organic radishes
cook quinoa:
use 2 cups liquid (vegetable broth) to 1 cup quinoa.
measure quinoa.
rinse thru strainer.
place in pot w/organic vegetable broth.
cover.
bring to boil and immediately reduce heat to simmer.
simmer quinoa for 15 minutes.
remove quinoa from heat, uncover and cool.
mix quinoa and chopped veggies in a large bowl.
excellent just as is.
or
drizzle w/freshly squeezed organic lemon juice
and
dash sea salt and organic pepper
(or any dressing of your choice).
