incredible edibles…yummy “is there really tofu in there” cornbread

2 tbs. safflower or canola oil
1 1/4 c. pastry flour
1 1/2 c. yellow cornmeal
3/4 c. agave ( or sugar)
2 tsp. baking powder
1 1/2 c. soy or rice milk
1/2 tsp. sea salt
1/2 c. silken tofu

preheat oven to 450 degrees.
oil a 13,9 inch glass glass baking fish
in a large mixing bowl combine:
cornmeal, flour, agave (or sugar),
baking powder
set aside
blend until smooth in a blender:
milk
tofu
1 tbs. oil
add and stir just enough to combined:
milk mixture to the cornmeal mixture
pour cornbread mixture into the prepared, oiled glass dish.
bake approx 20 minutes or until golden brown
cool on cooling rack
