small amount each canola and sesame oil
1Â green pepper, seeded and cut into thin strips
1Â sweet red pepper, seeded and cut into thin strips
1 yellow or orange pepper, seeded and cut into thin strips
1/2 purple onion, cut into thin strips
1/4 water
2 tbs. organic rice vinegar (seasoned rice vinegar okay also, just use less sweetener)
1-2 tbs. (or to your taste)Â agave – or any sweetener of your choice
1/2 tsp. dry mustard
2 c. canned or fresh mango slices, drained
2 tbs. fresh cilantro, chopped
heat oil in wok or large skillet until hot.
add peppers and onion
stir fry approx. 1-2 minutes.
combine water, rice vinegar, agave (sweetener) and dry mustard.
add vinegar/agave/dry mustard mixture to veggies in pan.
stir fry approx. 3 minutes.
add mango.
stir fry approx. 1 minute or until thoroughly heated.
place veggie/mango mixture into serving bowl.
sprinkle with cilantro.
serve immediately alone, over rice or quinoa.
