serves 2
1 large (hot house-the one wrapped in plastic wrap) cucumber
1 medium daikon radish (found at Whole Foods produce section)
1 tbs. Wakame Flakes – soaked in water then chopped (by Eden, found in Japanese section Whole Foods)
1/4 c. organic seasoned rice vinegar
1/8 c. sugar (or agave or any sweetener you prefer)
6-7 shakes white sesame seeds
slice cucumber and daikon radish thin.
chop the Wakame Flakes after they have soaked approx. 5-10 min.
in a bowl, mix rice vinegar, sugar and sesame seeds.
toss the cucumber/daikon into the vinegar mixture.
add the chopped Wakame Flakes
let it “marinade” for at least 1-2 hours. (even better the next day!)
but of course you can have some now if you can’t wait!
***you can also add any fish (raw sashimi or cooked) to this dish***
