incredible edibles…cheezy black bean enchilada casserole

Ezekiel sprouted whole grain tortillas (cut into approx. 1/2″ strips)
jack and cheddar cheeze – 3/4  of square brick each – Follow Your Heart Brand  (shredded or cubed into small cubes)
red and green enchilada sauce (1 med. can each)
organic frozen sweet white corn (1 bag)
organic cilantro – chopped (approx. 3/4 c.)
organic scallions (approx. 4 – chopped)
organic mexican seasoning (approx. 1/4 c.)
organic black beans (1 can)

pour enchilada sauces into large pyrex dish.
layer:
rest of ingredients (in any order) into dish.

(reserving some chopped cilantro, chopped scallions and some of the cheeze to sprinkle on top)
top w/remaining cilantro, chopped scallions and reserved cheeze.
bake uncovered @ 350 degrees until bubbly and beginning to brown.
optional: top w/non-dairy sour cream and/or sliced avocado.
