incredible edibles…the “always yummy depends on what’s in the kitchen” crock soup

April 23rd, 2010

put into crock pot:

quinoa (rinsed)

barley (rinsed)

any organic frozen veggies that you have on hand and love

and/or

any fresh organic veggies that you have on hand and love

and

largely chopped onion

add:

organic veggie broth (I use Imagine and 365 Whole Foods brands)

*cover veggies in crock w/broth almost to the top-not to boil over*

then:

season with Simply Organics All Purpose Seasoning

sea salt

Organic Garlic Gold Nuggets

If you are going to be home: Begin cooking on high for about 2 hrs. then switch to low. Check approximately every 30-45 minutes. When the veggies are tender and the quinoa and barley are cooked and plumped, or when you are so hungry and it smells so good that you just have to try some…the soup is ready to eat.

If you are leaving the house for the day: Turn crock pot to low. By the time you get home the kitchen should smell yummy and the soup will be ready to dig into.
