small amount olive oil
1 lg. onion – chopped
2 tsp. chopped garlic (fresh or from jar)
1 can black beans
2 pkg. frozen cooked shrimp (partially thawed/tails removed)
3 lg. or 10-15 cherry tomatoes – chopped
1 yellow bell pepper – chopped
3 lb. scallions – chopped
1 c. frozen white corn
2 shakes cayenne pepper (or to taste)
3-4 shakes red pepper flakes (or to taste)
4-5 shakes mexican seasoning (or to taste)
tortillas (whichever kind you prefer – I like the Ezekiel sprouted grain)
1 c. jack cheese or Follow Your Heart brand soy jack cheese – shredded
optional:
lettuce – chopped
avocado – chopped
sour cream or Follow Your Heart brand vegan gourmet sour cream
pre-heat pizza stone in oven set to 450 degrees.
saute in pan w/small amount olive oil:
onion, garlic, scallions and seasonings until slightly browned.
add rest of ingredients and saute until caramelized and mixed.
assemble pizzas:
top tortillas w/shrimp/veggie mixture.
sprinkle small amount of shredded cheese on top.
place on pizza stone.
bake until bubbly (approx. 5-6 minutes) *keep checking oven to make sure pizzas do not burn*
can eat as is or can top w/some lettuce, avocado and/or sour cream.
