tortillas (4-5 sm. or 2-3 lg. any kind.your preference cut into approx. 1/2″ strips)
soy mozzarella cheese (Trader Joe’s)- 2 block pkgs. (shredded)
red and green enchilada sauce (1 med. can each)
organic frozen sweet white corn (1 bag)
organic cilantro – chopped (approx. 3/4 c.)
organic scallions (approx. 4 – chopped)
organic mexican seasoning (approx. 1/4 c.)
organic black beans (1 can, drained)
organic kidney or pinto beans (1 can, drained)
optional:
non-dairy sour cream
chopped avocado
pour enchilada sauces into large pyrex dish.
layer:
rest of ingredients (in any order) into dish.
(reserving some chopped cilantro, chopped scallions and some of the cheeze to sprinkle on top)
top w/remaining cilantro, chopped scallions and reserved cheeze.
bake uncovered @ 350 degrees until bubbly and beginning to brown.
optional: top w/non-dairy sour cream and/or sliced avocado.
