2 pkgs. frozen pineapple
1/2 c. coconut milk
2-3 tbs. coconut, shredded, unsweetened
juice of 1/2 fresh lemon
3-4 tbs. agave (or more if tastes too sour)
variation: can use approx. 3/4 c. raw coconut butter instead of shredded coconut
and/or can substitute any non-dairy milk for coconut milk)
place all into blender.
process on pulse, scraping down sides.
blend until just mixed (don’t want it watery)
enjoy immediately or scoop into small glass bowls and freeze.
if frozen, thaw for a little and re-blend for smoother consistency)
