cooked beets (Trader Joes or Costco in box produce section)
hot house cucumber (or one with no/less seeds)
raisins
avocado (cubed(ish)
shredded cheese (vegan: Soysation-Whole Foods or Trader Joes)
petite peas (slightly thawed from frozen in a bag)
pumpkin seeds (raw/unsalted)
sunflower seeds (raw/unsalted)
garlic nuggets (Garlic Gold)
pepper (freshly ground)
balsamic vinegar
toss all ingredients (except vinegar) together in a large glass salad bowl.
drizzle vinegar and toss again lightly.
