miso sake baked tofu

1 or 2 (14oz) blocks firm tofu, sliced into approx. 1″ slices
2 tbs. mirin
2 tbs. sake
4 tbs. mellow or sweet white miso paste
2 tbs(ish) date paste (dates soaked then blended w/orange juice)
a few “dribbles” olive oil
a few “dribbles” sesame oil
more than a few shakes sesame seeds
1 scallion – chopped

heat a pizza stone (or any cookie sheet) in oven on ‘broil’ setting.
in glass mixing bowl:
whisk together:
mirin
sake
heat in microwave approx. 30 seconds.
whisk/mash miso paste into mirin/sake mixture until smooth.
add and whisk in:
date paste
set aside.
place sliced tofu slices onto sizzling hot stone and brush with olive and/or sesame oil.
turn slices over and brush other side with oil also.
broil for approximately 3-5 (ish) minutes or until slightly browned,checking often so they don’t burn.
now brush slices with miso sake sauce.
return to broiler approximately 1-2 minutes (ish) until they are caramelizing and bubbly.
remove from oven.

to serve, place slices atop rice (any kind, even wild).
drizzle remaining miso sake sauce.
sprinkle chopped scallions over eggplant pieces.
shake sesame seeds on top.

I promise you have NEVER tasted anything sooooooo amazing!
