incredible edibles…”oh sososo easy” veggie pasta sauce

you can vary this to better suit your tastes or ingredients on hand.

veggie broth (any kind in box-Whole Foods 365 brand is fine)
onion, chopped
garlic, chopped
zucchini, chopped
eggplant, chopped
mushrooms, chopped thick
canned diced canned tomatoes, including liquid
tomato paste
wine (red)
fresh Italian parsley, chopped
Italian seasoning (I like Simply Organic brand)
lots of fresh spinach, chopped

in a soup pan, saute in veggie broth until translucent:
onion
garlic
add to pot, and saute a little so veggies are “par” done:
zucchini
eggplant
mushrooms
add to pot:
tomatoes
tomato paste
wine
Italian parsley
Italian seasoning
cover and simmer for at least 15 minutes
add just before serving:

spinach
really yummy over pasta, spaghetti squash or used in a lasagna/pasta dish!!!
