incredible edibles…quinoa, wild rice and lentils…oh my!

1 c. red quinoa (well rinsed) *red quinoa is slightly sweeter than traditional white*
1 c. wild rice/lentil mixture (Whole Foods 365 organic brand is great)
4 c. (1 box) veggie broth
1 large onion, chopped
2 stalks celery, chopped
4-5(ish) cloves garlic, chopped fine
a few shakes of black pepper, freshly ground
1/3 c.(ish) green onion or chives, chopped
juice of 3(ish) lemons
some lemon zest
2 tbs.(ish) hemp seeds (optional)
finely chopped nuts of your choice (optional)
cooked yams or cooked butternut squash (optional)

in soup pot, saute onion, garlic and celery in “some swirls” (approx. 1/4-1/3ish c.) veggie broth.
when translucent, add:
remainder of veggie broth
quinoa
rice
pepper
cover and bring to boil.
keep covered and reduce heat to simmer until all liquid is absorbed (approx. 20-30 min.)
transfer to a glass bowl
toss with:
lemon juice
lemon zest
cooked yams or cooked butternut squash (optional)
hemp seeds (optional)
finely chopped nuts (optional)
sprinkle top with chopped green onion or chives (optional)
ummmmmmmmmmmm good! yummy served hot.
