1 14oz. package sprouted firm tofu, crumbled in plastic baggie w/hands or w/fork in a bow
a few swirls organic olive oil
2 tsp. chopped organic garlic (in jar)
1 cup sliced organic carrots, lightly microwaved – still crunchy
1 cup chopped organic mushrooms
1 cup chopped organic zucchini, lightly microwaved- still crunchy
1 lg. organic sweet onion, chopped
1 14oz. bag frozen whole leaf spinach, microwaved in glass dish and drained well
1/2 bag frozen hash brown potatoes
a few shakes “imported” brewers yeast
(Gayelord Hauser brand from Whole Foods)-modernfearn.com)
sea salt, to taste
pepper, to taste
all purpose seasoning, to taste
(simply organic brand from Whole Foods)
swirl a few swirls olive oil in large fry pan
add onion and garlic
saute, stirring constantly until onions are translucent
add carrots and zucchini to pan
constantly stir for approx. 3(ish) minutes
add
spinach
mushrooms
crumbled tofu
hash brown potatoes
brewers yeast
sea salt
pepper
turn heat to med
mix to combine and stir constantly approx. 3-5 minutes.
yummy alone for breakfast, lunch or dinner
or
roll up in a tortilla for an amazing wrap
