incredible edibles…sweet mango black beans and kashi pilaf

(amounts are approximate, experiment and adjust amounts to taste)

1 c. Kashi pilaf
2 c. organic vegetable broth
a few swirls organic canola oil
1/2-3/4 organic onion, sliced
3/4-1 c. organic red,yellow and orange bell peppers, sliced
1 large organic mango, cubed
2 (ish) cloves organic fresh garlic (or2 tbs. chopped from jar)
2 cans organic black beans
1/4 c. organic apple juice concentrate
1/3 c. organic cilantro, chopped
2 organic limes, juiced
1 organic avocado

make Kashi pilaf using vegetable broth:
measure ratio: 2 liquid (or more if you want softer) to 1 Kashi
in a medium covered pot:
bring Kashi and vegetable broth to a boil
then turn to low, simmer until liquid is absorbed (approx. 15-25 min.)
meanwhile,
saute in a few swirls of canola oil until onions are slightly translucent:
onion
bell peppers
add and stir frequently :
garlic
beans
lime juice
apple juice concentrate
cilantro
serve bean mixture over Kashi pilaf
