incredible edibles…sweet shredded clear kelp sunomono salad

1 large daikon radish, peeled (Whole Foods produce section – looks like a white carrot)
1 cucumber (hot house in plastic wrap) or Japanese cucumber
1/2 to 3/4 bag clear kelp noodles (by Sea Tangle-Whole Foods or Kelp noodles.com)
1 small carrot, peeled
SWEET SUNOMONO DRESSING:
1/3 c. organic rice vinegar
1/8 c. sugar (or 1/8 c. equivalent stevia or agave)
6-7 shakes black sesame seeds

shred daikon and carrot into large bowl.
slice cucumber in half length-wise, then slice thin into 1/2 moon shape.
rinse clear kelp noodles very well in strainer for approx. 2 minutes.
cut kelp noodles into “bite-able” length.
add cucumber and kelp to shredded daikon and carrot mixture in bowl and mix to combine.
in separate bowl whisk together:
rice vinegar, sugar and black sesame seeds until sugar is dissolved.
pour rice vinegar “dressing” over all ingredients in bowl.
let salad “marinade” for at least 1-2 hours in refrigerator to “marry” flavors.
yumm, yumm, yummy alone or can top with any fish, raw sashimi or cooked of any kind.
