1 – 28oz. can organic whole fire-roasted tomatoes, including liquid,chopped
2 sm. cans organic tomato paste
4 tsp. organic chopped garlic (i use the kind in a jar)
1 c.(ish) fresh organic italian flat leaf parsley, chopped
1/2 c. (ish) organic basil leaves, chopped
a few swirls organic olive oil
2 lb. eggplant, cut into 1 inch (ish) cubes
a few shakes sea salt
2-3 large organic onions, cut in 1/2 and sliced
3 red, orange and yellow bell peppers, cut into 1 inch (ish) pieces
4-5 organic zucchini, cut into 3/4 inch (ish) pieces
a shake (ish) organic black pepper
a shake (ish) crushed red pepper flakes
*note* can use roasted veggies also (pre-made or store bought)

lightly saute onion, garlic and veggies in olive oil
add rest of ingredients except mushrooms.
add mushrooms when veggies are beginning to get tender.
simmer until veggies are tender (at least 1 hour)
yummmmmmmmmmmy!
