incredible edibles…thank you sunshine sun-dried tomato dip/spread

about 1/2 c. sun-dried tomatoes, drained
2 (ish) tsp. chopped garlic (in a jar)
1 pkg. firm tofu
1/4 c. fresh basil, loosely packed
sea salt, to taste
freshly ground pepper, to taste


soak drained sun-dried tomatoes in boiling water approx. 5-10 min. so they can re-hydrate.
drain sun-dried tomatoes after their quick boil.
in a blender or food processor, pulse to blend tomatoes and garlic until they begin to form a paste.
add the tofu, basil, salt and pepper and blend until smooth.

yummy as a spread on tortilla wraps, or as a dip for warm crusted bread or a great dip for veggies.
