1/2 c. plain soy yogurt (I love WholeSoy & Co. brand from Whole Foods)
2 tbs. organic tahini
1 tbs. organic fresh dill, chopped
1 tsp. organic fresh lemon juice
1 tsp. apple cider vinegar
a few shakes organic garlic gold nuggets (or any garlic powder you like)
a few shakes organic onion powder
a few shakes sea salt
a shake of organic freshly ground pepper
1 or 2 small organic English cucumbers, finely chopped
in a mixing bowl, “fold in” and combine all ingredients with a “gentle hand”. Refrigerate for at least a couple of hours to let the flavors mix and mingle.
yum, yum, yummy with falafels, as a sandwich spread, an amazingly cool and refreshing dip for veggies or as a spread/topping for baking veggies, fish, or ………..
