incredible edibles…iks,nicks and tricks soup

organic veggie broth
organic olive oil
organic onions, chopped
here’s the its, nicks and tricks part
any veggies you have on hand, mix and match what you’ve got

sea salt
organic pepper
shredded soy cheese (I like Trader Joe’s Soy Sation)
organic scallions, chopped

saute onion in olive oil until softened but not browned
throw in washed, chopped veggies
continue to saute over medium heat until veggies are beginning to soften
add veggie broth and cook over medium to high heat, covered
soup should “rolling boil” for approximately 10ish minutes or until veggies are tender but not overcooked
turn off flame and remove pot cover
allow soup to cool somewhat
in batches, blend soup in blender
transfer back to pot
season with a few shakes sea salt and pepper
simmer soup until ready to eat
to serve: ladle into cups
sprinkle with small amount of any shredded soy cheese
top with a pinch of chopped scallions
