4-5 medium beets (peeled, chopped and boiled)
(or 1-2 boxes ready to eat cooked, peeled beets- Trader Joe’s produce section)
juice of 2 large (or 3 small) organic lemons
1/4 c. organic tahini
1-2 cloves organic garlic (or 1-2 tsp. minced garlic in a jar)
a few shakes sea salt
Pulse all ingredients in blender until smooth.
That’s it!
