incredible edibles…crunchnutty baked tofu

1/3-1/2 c. agave
1/3 c. organic whole grain country mustard
1/3 c. peanuts (pulsed in food processor)
1 c. panko or any crunchy breadcrumbs
1 lb. package organic extra firm tofu (sliced approx. 1/2″ thick)
olive oil and/or olive oil spray
1/3 c. orange marmalade, peach or any kind of 100% pure fruit spread

mix agave and mustard in a shallow bowl.
combine panko (or crunchy breadcrumbs) and peanuts in shallow bowl.
dip into and/or brush tofu slices with agave and mustard mixture.
dip both sides of tofu into panko or breadcrumbs.
lightly oil parchment paper lined cookie sheet OR pizza stone.
bake at 450-500 degrees for approx. 7-10 minutes until slightly browned and crunchy.
yummy with a dollop of 100% fruit spread.
eat it alone or over rice or quinoa.
