2-3 tbs. organic olive oil
2 organic onions, chopped
2 tsp. organic garlic, chopped
1 pkg. (l lb) organic split peas
1 lb. organic baby carrots
4-5 stalks organic celery
3 (or more) cartons organic veggie broth
sea salt, to taste
organic pepper, to taste
in a large soup pot:
saute onions, garlic and celery until onions are translucent.
add the rest of the ingredients.
bring the soup to a boil and keep boiling for approx. 10-15 minutes.
lower heat to simmer.
simmer approximately 2 1/2 – 3 hours or until peas are mushy and not hard.
when partially cooled:
put soup into blender in batches.
return to pot.
serve alone or with homemade organic croutons.
