incredible edibles…beans and yams, an oh so good combo

approx 1 1/2-2 lbs. organic yams
1/2-3/4 organic veggie broth
1 can organic black beans, drained
approx. 5-6 shakes organic Mexican seasoning
approx. 3-4 shakes organic red chili pepper flakes
3-4 scallions (include some of the green part)
juice of 1-2 fresh organic limes
sea salt

peel and cut yams into small chunks.
steam yams until tender.
in a medium pot:
add:
veggie broth, Mexican seasoning, red chili pepper flakes, sea salt.
over medium heat:
stir and cook approx. 3-4 ish minutes.
carefully add (to not shmush):
beans and yams
stir and cook approx. 5 ish minutes.
lower heat to simmer.
add:
lime juice, and scallions

Very yummy enclosed in lettuce (as lettuce wrap)
or
great inside tortillas (as a roll-up)
