1-2 tbs. organic olive oil
1 organic sweet onions, chopped
1-2 tbs. crushed organic garlic (in a jar or freshly crushed)
approx. 1/4 c. organic mexican seasoning (i use Spice Hunter 100% organic)
1 12 oz. package Yves brand meatless taco stuffers
1 lg. can organic fire roasted crushed tomatoes, including liquid
1 lg. can organic whole tomatoes w/basil (cut into large chunks), including liquid
1 sm. can organic tomato paste
1 can organic black beans, drained
1 can organic kidney beans, drained
1 can organic pinto beans, drained
1/2 organic sweet onion, chopped
vegan (follow your heart brand) sour cream

in a “soup” pot lightly saute:
1 chopped onion and the chopped garlic in olive oil.
add:
approx. 2 tbs. mexican seasoning, reserving the rest for later.
saute until mixed with onion/garlic mixture.
add:
whole package of meatless taco stuffers “meat”
fire roasted crushed tomatoes
whole tomatoes w/ basil
black, kidney and pinto beans
tomato paste
remaining mexican seasoning
stir and cook at low to medium heat until slightly bubbling.
reduce heat to low and simmer for at least 20 minutes (or until you just HAVE to have some!)
serve topped with chopped onion and dollup of “sour cream”.
