1 can organic lentils, drained
1 small can chopped/diced green chilies
1/2 organic sweet (or any other kind) onion, chopped
2 organic garlic cloves, chopped
3-4 shakes organic mexican seasoning
sea salt and organic pepper to taste
1 small can organic tomato paste
2-4 (ish) tbs. organic olive oil
1 organic avocado
lots of shredded organic lettuce
vegan sour cream
organic corn and bean salsa (Amy’s is really good)
Ezekiel sprouted tortillas
saute onion and garlic in oil, until translucent and beginning to smell yummy.
add seasoning, tomato paste and green chilies.
continue to saute until everything is blended and coated well.
“toast” tortillas in toaster oven or on a pizza stone in regular oven until crispy.
Place a tortilla on each plate.
Top with lentil mixture.
Add lettuce, avocado and tomatoes on top.
Add a few tablespoons of salsa and a dollop of vegan sour cream and sprinkle with mexican seasoning.
Yum, yum, yum!
