incredible edibles…yummy “do so many things with” roasted veggies

tomato
zucchini
onion
red pepper
(any other veggie that you desire!)
olive oil
chopped garlic (freeze dried or fresh)
italian or mexican seasoning (whichever you are in the mood for)

slice and chunk the veggies. put into large baggie.
add olive oil and seasonings to baggie and turn over and over to coat veges.

place veggies onto heated pizza stone (pre-heated in 350 degrees oven)

roast for approx. 10 min. (turning and checking frequently – not to burn)

*can eat alone
or roll up in tortilla w/chopped lettuce, avocado, etc. etc.)
or sprinkle shredded cheese and enjoy
or place atop brown rice or quinoa
