incredible edibles…veggie “parmesan”

sliced eggplant (with skin)
sliced/cubed butternut squash (skinned)
sliced carrots (cleaned and peeled)
fresh baby spinach (produce/lettuce section of market)
homemade or jarred pasta sauce
shredded “mozzarella” cheese (Soysation brand in a block-Whole Foods)
shredded 3 Cheese (Soysation brand Whole Foods or Trader Joes)

line glass pyrex dish w/a layer of pasta sauce.
add layers of veggies.
add cheeses (saving some shredded “3 cheese” for top.
repeat until ingredients are almost to the top of dish.
end with a sprinkling of the shredded “3 cheese”.
bake at 350 degrees until bubbly.
yummmmmmmmmmmmmmmmmmmmm!

mocha-nanna “ice cream”

frozen bananas
cacao powder
rice milk
vanilla extract
a few dates
agave
instant or brewed coffee (about 1/3 amount of milk used)

process in blender until smooth (dates will stay a little chunky).
serve and eat immediately
or
freeze for later (thaw out slightly and stir before serving)

sososososososososos yummy!

“Be yourself. Everyone else is taken!”
Recently I came across a quote by Oscar Wilde…”Be yourself. Everyone else is taken!” As children, most of us are constantly told we can be anything we want to be. We are praised for the good and interesting things that we do and most of the time, punished for the not so good things that we do. We learn that it feels good to be praised and rewarded for something that we have done. I remember being told that we should be an individual. But, really what was expected was that we should “fit in with the crowd”. “Don’t be too extreme or odd or too far from the norm or else you will be pegged as different. Not different in a good way either. Different in a way that most would say was “out there”. What do we learn from this as children? We hear the words “be an individual” yet the actions of those around us say the complete opposite. It seems that children now are recognized for their strengths as well as their weaknesses or different behaviors. As adults we now know how important it is that in order to instill confidence we need to show our children how great it feels to be successful at being just who they are…nothing different. We make great attempts to give them opportunities where they can fall and learn to get up themselves. We watch with oh so careful eyes what skills and interests they excel in. We try to downplay their weaknesses and help them to improve. I think the adults of tomorrow will be able to more easily see the “greatness” in themselves, allowing them to shine as the person they are instead of constantly trying to be “that other person over there”.For as far back as I can remember, I somehow got lost in the notion that everyone else was better at everything than I was. Everyone could attain better grades, make friends easier, be better test takers, look better in clothes and most of all I always felt so envious of all of the people that could eat what they wanted and not make an issue of it. They ate what they wanted, liked, craved and that was that. I cannot remember a day that I ever ate even one bite of anything without attaching to it a huge amount of guilt. I began my lifelong self-defeating roller coaster of dieting, deprivation, extreme will power, chemical foods and simply feeling different than everyone else. I just couldn’t feel successful at anything. For some reason, because I couldn’t conquer my weight issues, my self esteem and ability to think that I could be my best self just couldn’t blossom. All that I did or attempted to do was tied into the fact that I couldn’t stay at an “acceptable weight”. Who set the norm for the “acceptable weight” anyway? We all are unique and began with “no diet mentality baggage”. We all began being fed when we were hungry, only ate what we liked and never would accept a morsel or drink of any food when we were no longer hungry. We all thought that the world revolved around us when we were babies and that made us smile. As soon as we “learned” to conform to what was expected of us whether it was what to do, who to like, which subject we should do well in, when and what to eat from outside sources; we actually began to try to “be like everyone else”. I am a constant work in progress. I am in a place in my life where I can honestly say “I’m so glad to be me!”. I wouldn’t trade all of my insecurities, failures, doubts, weight issues, or anything for that matter, for anything in the world. Those are the very things that actually brought me to where I am today. I am an original and I’ve worked hard to be here. Think about your beginnings and where you are now and what you think of yourself. There really is never going to be another you and as far as I know we only go around once…so take a look at the things in your life that you have considered to be your weaknesses or failures and see if you can look at them as stepping stones that brought you to be the best you can before now. I so agree with Oscar Wilde…”BE YOURSELF. EVERYONE ELSE IS TAKEN!”

miso sake baked tofu

1 or 2 (14oz) blocks firm tofu, sliced into approx. 1″ slices
2 tbs. mirin
2 tbs. sake
4 tbs. mellow or sweet white miso paste
2 tbs(ish) date paste (dates soaked then blended w/orange juice)
a few “dribbles” olive oil
a few “dribbles” sesame oil
more than a few shakes sesame seeds
1 scallion – chopped

heat a pizza stone (or any cookie sheet) in oven on ‘broil’ setting.
in glass mixing bowl:
whisk together:
mirin
sake
heat in microwave approx. 30 seconds.
whisk/mash miso paste into mirin/sake mixture until smooth.
add and whisk in:
date paste
set aside.
place sliced tofu slices onto sizzling hot stone and brush with olive and/or sesame oil.
turn slices over and brush other side with oil also.
broil for approximately 3-5 (ish) minutes or until slightly browned,checking often so they don’t burn.
now brush slices with miso sake sauce.
return to broiler approximately 1-2 minutes (ish) until they are caramelizing and bubbly.
remove from oven.

to serve, place slices atop rice (any kind, even wild).
drizzle remaining miso sake sauce.
sprinkle chopped scallions over eggplant pieces.
shake sesame seeds on top.

I promise you have NEVER tasted anything sooooooo amazing!
