incredible edibles…rainbow chard soup

1 bunch organic rainbow chard, middle stem removed and chopped
a few small swirls organic olive oil
1 large organic onion
1 shallot
4 (ish) organic garlic cloves (or 4 (ish) tsp. chopped from jar)
1 can organic white beans, drained (or 1 c. raw, soaked overnight)
2 – 32oz. boxes organic veggie broth
1/4 c. (ish) organic parsley, chopped fine
a few shakes sea salt
a few shakes organic freshly ground pepper
a few shakes red pepper flakes

heat olive oil in soup pot and add onions, shallot and garlic.
lightly saute.
add:
beans
veggie broth
sea salt
pepper red pepper flakes
cover and bring to boil.
reduce heat to low and simmer approximately 30-40 minutes.
add:
rainbow chard
parsley
simmer approximately 10 (ish) minutes more.

can eat as is or can blend some or all of soup to make “creamy”.
yummmmmmm…..warm……

incredible edibles…raspberry fudge bites

3 (ish) tbs. organic cocoa powder
4 (ish) tbs. organic coconut butter (i use Artisana brand in jar near spices @ Whole Foods)
2/3 (ish) c. organic frozen raspberries (slightly thawed)
a “shpritz” of sea salt
1/4 (ish) c. agave

in a glass bowl:
melt coconut butter and 1/4 of the raspberries in microwave (not too long…just to melt)
add:
the rest of the ingredients and
stir, stir, stir with fork (the coconut will harden a little on the fork…scrape it down
spread into glass pyrex type dish
freeze
you can eat it straight from the dish
or
cut into little bite sized squares.
use parchment paper to divide squares, if storing back in freezer.
Vegan…not vegan…EVERYONE LOVES these!

a twist on “serenity” prayer

I have always thrived on making mental as well as physical lists for self improvement. Weight, attitude, knowledge, acceptance, confidence. In fact a running joke with anyone who knows me is…if anyone is ever in need of a self help/improvement book or article…look no further than Lori’s shelves!!!
But I have to admit something big…I realize that I have also (even though I know logically that this is futile)always tried to change people. Change the way they feel either about me or about something I might be passionate about. Sometimes this has worked in my favor as well as the people around me. This trait (flaw?) has afforded me the opportunity to “jump into other’s lives, ride their life’s waves and help them ‘change the channel’ in their heads”. I have the ability to add a positive and logical spin for others.
For me…no so much. It takes a huge amount of effort for me to do this for myself. Unfortunately, I have always been the person who wakes up with the glass 1/2 empty. Fortunately, I have also been one to work at changing my perspective throughout the day in order to create a 1/2 full glass attitude.
Here’s what I’ve come up with…maybe this little twist on an oldie but goodie will be helpful for you also.
“…Please, grant me the serenity to accept the PEOPLE I cannot change…
The courage to change the ONE I can…
And the wisdom to know IT’S ME!”
Have a 1/2 full day!

incredible edibles…miso drizzle/dip/sauce

1/2 c. white mellow miso paste
3-4 garlic cloves, chopped fine (or 3 tbs. chopped in jar)
1/4 c. light agave
1/8 c. mirin (found in Japanese section of market)
4 tsp. tamari (soy sauce)
1/4-1/2 c. (ish) olive oil
2 tsp. (ish) sesame oil
*optional* a few shakes ginger powder or a little grated fresh ginger

Blend in blender until smooth and creamy.

Drizzle over veggies…
Dip any veggie and say yum…
Cover fish or veggies w/sauce and bake or broil…

incredible edibles…yam brulee

6 medium yams, peeled and cubed
2 tbs.(ish) maple syrup
1/2 tsp.(ish) vanilla extract
4 tbs.(ish) maple sugar

place yam cubes into glass dish w/ small amount of water
microwave until soft
place yams into blender/food processor
blend until schmushy
add the maple syrup and vanilla
blend again until mixed
place yam mixture into custard cups suitable for the oven
top each cup with the maple sugar
put cups onto baking sheet
place in oven on broil
broil approximately 5(ish) minutes
keep watch so the sugar doesn’t burn
you want it to be melted and bubbly
um,um,um good!
