incredible edibles…quinoa, wild rice and lentils…oh my!

1 c. red quinoa (well rinsed) *red quinoa is slightly sweeter than traditional white*
1 c. wild rice/lentil mixture (Whole Foods 365 organic brand is great)
4 c. (1 box) veggie broth
1 large onion, chopped
2 stalks celery, chopped
4-5(ish) cloves garlic, chopped fine
a few shakes of black pepper, freshly ground
1/3 c.(ish) green onion or chives, chopped
juice of 3(ish) lemons
some lemon zest
2 tbs.(ish) hemp seeds (optional)
finely chopped nuts of your choice (optional)
cooked yams or cooked butternut squash (optional)

in soup pot, saute onion, garlic and celery in “some swirls” (approx. 1/4-1/3ish c.) veggie broth.
when translucent, add:
remainder of veggie broth
quinoa
rice
pepper
cover and bring to boil.
keep covered and reduce heat to simmer until all liquid is absorbed (approx. 20-30 min.)
transfer to a glass bowl
toss with:
lemon juice
lemon zest
cooked yams or cooked butternut squash (optional)
hemp seeds (optional)
finely chopped nuts (optional)
sprinkle top with chopped green onion or chives (optional)
ummmmmmmmmmmm good! yummy served hot.

Happy New Year
Happy New You
What would it take to make a “happy new you”?
The easiest way to “change” or “modify” any behavior is to go TOWARD something.
When you are excited to travel toward instead of away from an action, it becomes attainable with little to no effort.
The reason resolutions usually fade soon after vowed is because looking back at what we “had” or “did” or “practiced” becomes the main focus. “I used to be able to…….”, “I used to eat…….”, “I’m NOT going to do this or that…..”.
“Resolve requires willpower”.
Willpower never sticks.
We are all pleasure seekers. Our brains and whole body chemistry is made to seek pleasure and avoid pain or hard situations.
Making a New Years or any other “resolution” always involves willpower.
If you “change the channel” in your way of thinking to running TOWARD pleasure (change), you will be guaranteed to attain your goals.
This is a fail-safe plan.
Make this new year the best by turning toward your pleasure!

incredible edibles…Chef AJ’s incredible raw brownies

A big thank you to Chef AJ for these incredible brownies!

2 c. brazil nuts/sunflower seeds, combined
with “s” blade, grind in food processor into a “flour” (not a paste)
add:
1/4 (ish) c. cacao powder
3 c. (ish) pitted dates
process until the “dough” breaks evenly in hands
add:
1 tbs. vanilla (alcohol free – better tasting!)
1/2 c. (ish) cacao nibs (bits)
blend until mixed together.
in a “silicone brownie bite” pan:
spread/press with fingers “brownie” mixture into pan
freeze
you now have the MOST UNBELIEVABLE “brownie” ever!
***better make another batch soon…they disappear quickly!***

incredible edibles…”hidden healthy” smoothie

thank you Chef AJ and The Plant Dietitian!!!

1/3 c. (ish) of any/all of the following:
frozen:
pineapple
cherries
mango
wild blueberries (or “berry mixture” bag)
raspberries (or “berry mixture” bag)
1/4 c. (ish) cacao powder (or cocoa, whichever)
1/4 c. (ish) cacao nibs, unsweetened
a few tbs. hempseeds
pitted dates, to taste (if needed…i usually do)
2 (ish) c. almond milk (can use rice if you prefer)
very important to include:
1 frozen banana
a handful of pitted dates
now for the “hidden healthy” ingredient:
3 (ish) c. fresh kale (yes, kale…I promise you WILL NOT TASTE IT)

place all in a high powered blender, I put kale first and schmush down
blend until smooth (cocoa nibs will stay “chocolate chip-ish”)
drink now…
sip all morning…
or as I usually do:
put into ice cube trays for later (thaw until schmushy and stir before drinking)
SO SURPRISINGLY YUMMY!!!!!!

3. Remember, each day is just another day.
4. Have good intentions.
5. What can you do for someone else today?
6. You are not a “super” robot.
7. Laugh.
8. Meditate.
9. Read.
10. Cook.
11. Walk.
12. Listen.
13. Now add any of your own personal actions…
