It’s okay to “have a party in your mouth”!
In fact, that’s exactly what I want you to think about every time you eat.
Eating should be a celebration.
You should love everything your food.
The aromas.
The crunch.
The crispness.
The tartness.
The sweetness.
The colorful, flavorful experience of it all!

incredible edibles…another easy cheezy krispy kale (or anything) sauce

1 and 3/4(ish)c.-2(ish)c. soaked, drained cashews
or
1 and 3/4(ish)c. soaked/drained cashews and 1/4(ish) c. soaked/drained sunflower seeds
1/4-1/3(ish) c. fresh squeezed lemon juice
1 lg. yellow or red bell pepper, cut in chunks
1/2-3/4c. nutritional yeast
1 sm. clove garlic
a few shakes smoked paprika
a few shakes chili powder
a few shakes dulce or kelp granules (in the Japanese section-Whole Foods)
a few shakes red pepper flakes
black peppercorns w/chipotle (Frontier brand-Whole Foods or Sprouts)
or any other seasoning you love
(optional-if needed) water

soak cashews (and/or sunflower seeds) in water to cover them approx. 15min.-1/2hr.
drain and add to food processor.
add rest of ingredients except the optional water.
process until smooth.
add water (if needed) to reach “gooey-stick to food” consistency.
yummy for baked kale chips, on baked potatoes, veggies…you name it!

incredible edibles…lime tofu fajitas

1/4-1/3 c.(ish) freshly squeezed lime juice
1 box firm tofu, (preferably sprouted) drained and cubed
1 small onion, sliced into half moon shape
2-3 scallions (whole, ends trimmed)
1-1 1/2 c.(ish) combo of orange, red and/or yellow bell peppers, sliced
any kind of sliced/chopped veggies you want or have on hand (zucchini, spinach..any)
1 can black beans, rinsed and drained
1 c.(ish) frozen sweet corn (not on cob)
Mexican seasoning, to taste (I like Spice Hunter Organic brand)
red pepper flakes (to taste)
cayenne pepper (to taste)
cilantro, chopped (amount to taste)
avocado, chopped
tomatoes, chopped
lettuce, shredded
additional freshly squeezed lime juice for sprinkling on finished fajitas
Rice Medley (Whole Foods 365 Organic brand)
veggie broth (enough for 2:1 ratio for rice…1 rice to 2 (a little more) broth)
tortillas (preferably sprouted…but your choice)

in large glass mixing bowl, add:
lime juice
marinade: (for at least 1-2 hours, overnight even better!)
tofu
onions
scallions
red, orange and/or yellow bell peppers
black beans
corn
Mexican Seasoning
red pepper flakes
cayenne
cilantro
cover and let marinade in refrigerator at least 1-2 hours (overnight, even better!)
in a pot w/lid, add:
rice medley
veggie broth
cover and bring to a boil
immediately lower to simmer and keep covered until broth is absorbed into rice.
when ready to prepare fajitas:
in a large pan or wok, (I use Eco/Green non stick…amazing…no harmful toxins)
saute all marinaded ingredients until slightly browned.
to serve:
heat tortillas in microwave
serve fajitas with sides of:
rice medley
tomato
avocado
lettuce
extra lime juice

voila!!! oooops, I mean Ole’

Give yourself the gift of an “attitude adjustment”.
You’ve heard it before.
Adopt an Attitude of Gratitude.
Take a few moments to find at least one thing in your life for which you are grateful.
I know…sometimes it’s really hard to find it.
Those are the times it’s so important and productive to name and acknowledge what makes you grateful.
When you actually sit down to do this short exercise, I guarantee you will find more than you think.
You are “more” than you usually allow yourself credit for.
You are unique.
You are special.
You can accomplish anything.

incredible edibles…”oh sososo easy” veggie pasta sauce

you can vary this to better suit your tastes or ingredients on hand.

veggie broth (any kind in box-Whole Foods 365 brand is fine)
onion, chopped
garlic, chopped
zucchini, chopped
eggplant, chopped
mushrooms, chopped thick
canned diced canned tomatoes, including liquid
tomato paste
wine (red)
fresh Italian parsley, chopped
Italian seasoning (I like Simply Organic brand)
lots of fresh spinach, chopped

in a soup pan, saute in veggie broth until translucent:
onion
garlic
add to pot, and saute a little so veggies are “par” done:
zucchini
eggplant
mushrooms
add to pot:
tomatoes
tomato paste
wine
Italian parsley
Italian seasoning
cover and simmer for at least 15 minutes
add just before serving:

spinach
really yummy over pasta, spaghetti squash or used in a lasagna/pasta dish!!!

What is the best day you can remember?
Was is blue sky and sunny?
Grey and cozy?
What are the smells and aromas?
Can you hear sounds?
Are you alone or with others?
We all have moments (sometimes just seconds) when we feel at peace and serene.
Picture a file cabinet in your head.
Put this feeling into a hanging file folder.
Label it “IMPORTANT”.
Keep this file close to the front.
Access this “file” when you need to push yourself up.
Know that you are the only one that controls this file cabinet, always!
